Puran Poli, Vedhami, Bedami recipe
This one is a basic and simplest recipe of puranpoli. It was made by my grandmother with very basic and simple ingredients.There are many variations possible with this recipe but i would start with the simplest version and may be later i will post more modern version of it....................
Ingredients:
Tuar dal -2 cups
Jaggary- 250 gms
Nutmeg powder(jayfal)-1/4th teaspoon
mace powder(javintri)-1/4th teaspoon
Khukhus(poppyseed)-1 table spoon
Ghee- 2 tablespoon
What flour and water- To make chapati dough
Method:
1. Soak the dal for 2-3 hours and boil with medium quantity of water. Make 2 whistles in the pressure cooker.
2. In a kadai take 2 table spoon of ghee and add the boiled dal to it. Add jaggary, mace and nutmeg powder and khuskhus to it.
3. Cook to this mixture till it thickens. The dal paste should not fall down from the laddle. Allow the mixture to cool. Upon cooling it will become of solid consistency.
4. Make a chapati dough and allow it to stand for half an hour. Now take the dal mixture and make a ball. Roll a chapati and put the dal stuffing in the centre.
5. Cover the stuffing with roti and seal from the top. Remove excess of dough.
6. Now roll the puran poli with a light hand in such a way that the stuffing doesn't come out.
7. Roast the poli on the tawa on a medium flame untill it becomes golden brown from both the sides. If you with you could shallow fry the polis with a little amount of ghee.
8. Now serve the hot polis with generous amount of ghee poured on it.
