How to make Butter and Ghee at home! Clarified Butter/Ghee/Makhan/loni

Generally making ghee or butter at home is a boring and lengthy process. It is a tough task to clean utensils and other equipment used i.e., hand mixer after preparing butter. But today i m going to share a simple method of preparing butter and then ghee at home using only two vessels and without much efforts ...............

Ingredients:
Malai - 1 bowl

Vessels:
A big handi (generally i accumulate malai in the handi itself for entire week)
a stirrer

Method:
1. Accumulate malai/cream from full cream milk. You can accumulate for a week to 10 days depending upon amount of milk you take.


2. Keep the bowl at room temperature for at least 4 hours. Generally i bring the bowl out from refrigerator in the morning and prepare the butter in the noon. 
 3. Now start stirring the cream with the stirrer(mathani). I assure you need not use the hand mixer or any other kind of mixer to centrifuge the cream.It will start to curdle and the solid and liquid part will start separating.

 4. Now add fresh water (cold water if the temperature is high) and wash the butter thoroughly 3-4 times.
 4. The water will be clean after 4 wash. It will no longer milky. Remove all the water carefully and drain it completely.

 5. Take the amount of butter you wish to use in an airtight container and store in refrigerator. This butter can be used for eating, cooking and baking. If you wish to preserve it for a long keep it in the deep freezer.

 6. Now put the clean butter on the gas stove and it will start melting.
 7. It will start simmering and bubbling.
 8. Keep the heat medium and allow the liquid to boil.
 9. Once it reaches to this stage start stirring it with the mathani and increase the stove temperature.
 10. In next 2-3 minutes the solids will separate out and the liquid ghee will be separated.

 11. Now allow it to cool it for 10 minutes and then strain.
 12. Pure home made desi ghee is ready. The colour is beautiful and the aroma is yummy!

Tips: Clean the butter more with water if you wish to preserve it. Also remove the water completely. You can add a pinch of turmeric and salt also to give a feel of Amul Butter.
