Vada pav recipe
Today i will share a recipe of vada pav. It is a very popular snack item. I will prepare it with a little twist in ahmedabad style....... the pav is shallow fried with a spicy garlic chutney before serving a grama garam vada pav.
Ingredients:
For Vada:(serves 4)
4-5 medium size potato
1 inch piece of ginger
4-5 cloves of garlic
a spoonful of udad dal(white)
1 table spoon oil (For tampering)
2-3 green chillies
4-5 strings of coriander
4-5 curry leaves
a pinch of hing and a pinch of turmeric
salt to taste
For garlic chutney:
9-10 cloves of garlics
2 table spoonful of red chilly powder
1 table spoonful of coriander powder
1 teaspoonful oil
salt to taste
oil for frying
Pav
For Better:
Besan 2 cups
pinof hing and pinch of ajwain
salt to tastehi
2 table spoon dahi/curd
water
Method:
1. Boil the potatoes allow them to cool and mesh. Crush garlic ginger, green chillies and coriander in the mixer grinder to make a coarsely crushed masala.
2. Put some oil in kadai and add mustard seeds. Once the mustard seeds start crackling add hind, udad dal, curry leaves, turmeric and green masala mixture to it. Switch off the stove and add meshed potato to it.
3. Add salt to it and mix the masala with potatoes. Now make medium size balls of potato mixture.
4. Take besan in a bowl and add ajwain, salt , curd and a pinch of soda to it. Now add water as required and prepare a smooth and thick better.
5. Now put the oil to heat in kadai for frying. Immerse the potato balls in the better and deep fry. Fry the vada untill golden in colour. Make all the vada ready and keep them aside.
6. Now in mixer bowl take garlic, red chilly powder, coriander powder, salt and oil. Make a dry chutney in mixer.
7.Now put oil in a tava and heat. Add red chutney and fry the bun in it. Put the vada in between
and serve hot with ketchup. You can also use butter in place of oil to make butter vada pav.
Try this recipe it will taste like vada pav we eat at famous counters on streets.
